Ingredients
- 4 cups of whole milk
- 1 cup of fresh cream
- A pinch of salt
- 3 tablespoons of vinegar
Method
- Heat milk and cream in a saucepan over medium heat until warm.
- Once warm, add salt and vinegar. The mixture will curdle and separate. Remove from heat.
- Place a muslin cloth over a large sieve placed on a bowl, then pour the mixture onto it. Allow the excess whey water to drain into the bowl.
- Transfer the cheese from the muslin cloth to a blender jar and blend until smooth.
- If the texture is not smooth enough, add whey water 1 tablespoon at a time and blend for 15 seconds.
- Once desired texture is achieved, transfer to a container, cling wrap to prevent drying, and refrigerate for 30 mins.
