Caramel Jelly
– 110g of sugar
– 20g of honey
– 200 ml of heavy cream
– 3 egg yolks
– 3 gelatine leaves
Chocolate mousse
– 45g of sugar
– 22ml of water
– 3 egg yolks
– 120g of chocolate 70%
– 200g of heavy cream
– 2 gelatine leaves
Cocoa crumble
– 30g of butter
– 135g of fine sugar
– 45g of plain flour
– 10g of cocoa powder
