Ingredients:
6 large egg whites (210g), at room temperature
½ teaspoon Diamond Crystal kosher salt
¼ teaspoon cream of tartar, or ½ teaspoon distilled white vinegar
1 cup granulated sugar (200g)
1 cup confectioners’ sugar (120g)
1 teaspoon vanilla extract
1 cup heavy cream (240g)
½ cup crème fraîche (120g)
¾ cup passion fruit pulp
1 tablespoon agave
Optional ½ teaspoon of vanilla extract for Whipped Cream
