Risalamande is a traditional Danish Christmas dessert and has been around since the mid 1800’s. The origins stems from the traditional Christmas rice porridge (risengrød). In the early 1900’s (during the depression era), risalamande experienced an increase in popularity, being known as a “savings” dessert because the ingredients were cheap and easy to get. Now a days, risalamande is the typical Danish dessert served in Danish homes during their Christmas celebrations.

This delicious Christmas dessert is made out of rice porridge mixed with whipped cream, vanilla, and chopped almonds. In addition, there is one hidden whole almond in the risalamande. The person who finds the almond will get an extra gift during the Christmas celebrations. This usually helps on the number of second helpings!! It is a tradition not to reveal who has the almond until all the pudding has been eaten which is part of the fun. (Over the years, our Danish family has had a lot of laughs trying to figure out who has the almond.) The delicious and easy Christmas dessert is usually served cold with warm cherry sauce (kirsebærsauce).

Did you know risalamande is derived from the French “riz à l’amande” which means rice with almonds? Sometimes risalamande is also spelled as ris à l’amande, ris a la mande, or ris ala mande. In Sweden, risalamande is spelled as ris à la malta too.
