Key Lime Pie
Yields one 9-inch pie

CRUST
6 ounces (170g) graham crackers
4 tablespoons melted and cooled unsalted butter
2 tablespoons granulated sugar
1 large egg yolk
½ teaspoon Diamond Crystal kosher salt or ¼ teaspoon Morton kosher salt

FILLING
1 tablespoon freshly grated lime zest
5 large egg yolks
1 14-oz can sweetened condensed milk
¾ cup strained fresh lime juice
Pinch of salt
1 teaspoon vanilla extract

TOPPING AND ASSEMBLY
2 ounces cream cheese, at room temperature
2 tablespoons powdered sugar
1 cup chilled heavy cream
Additional fresh lime zest, for garnish

PREHEAT THE OVEN: Position an oven rack in the center and preheat to 350°F.

CREATE THE CRUST: Place the graham crackers in a sealed bag, expel air, and seal. Utilize a rolling pin or sturdy-bottomed saucepan to crush the crackers, shaking the bag intermittently to settle larger pieces to one side, until obtaining consistently fine crumbs. (It’s also feasible to finely grind them in a food processor, but manual crushing works well too.) Transfer the crumbs to a medium bowl, add the melted butter, granulated sugar, yolk, and salt. Mix thoroughly with a fork, then rub the mixture between fingertips until it resembles moist sand.

PRESS AND BAKE THE CRUST: Move the mixture to a 9-inch pie plate, spreading crumbs evenly across the base. Utilize a straight-sided glass or 1-cup dry measure to firmly press the mixture up the sides and across the bottom of the plate, flattening it evenly. Place the plate on a baking sheet and bake until the crust is aromatic, firm to touch, and dark brown at the edges, approximately 8 to 12 minutes. Remove from the oven and allow to cool while preparing the filling.

REDUCE OVEN TEMPERATURE: Lower the oven temperature to 325°F.

PREPARE THE FILLING AND BAKE: Combine zest, yolks, sweetened condensed milk, lime juice, salt, and vanilla in a medium bowl. Whisk until completely smooth. Pour into the pie plate, smoothing the surface. Return the pie to the oven and bake until the filling sets, slightly wobbly in the center, for 15 to 20 minutes. Take it out and allow to cool entirely at room temperature for about an hour. Afterward, refrigerate until cold, at least 2 hours.

CREATE THE TOPPING: Blend cream cheese and powdered sugar in a medium bowl until smooth. Gradually add a few tablespoons of cold cream while whisking. Continue incorporating the cream slowly, whisking consistently to prevent clumps, until a thick, smooth mixture forms. Whisk briskly until a softly whipped cream with medium peaks is achieved. Retrieve the pie from the refrigerator, spread the whipped cream evenly over the surface, almost reaching the edges. Chill until the topping sets, at least 15 minutes.

SERVING: Garnish the pie with fresh lime zest, slice, and serve.

PREPARATION AHEAD: The pie can be baked and chilled (without the topping) up to 1 day beforehand. When cold, loosely cover with plastic wrap and add the topping a couple of hours before serving. Any leftovers can be stored, covered with plastic, in the refrigerator for several days (note that the crust may soften over time).
