Crispy Baked Chicken Wings with Honey Lime Sauce

Yield: 4 to 5 servings
Active Time: 15 minutes
Total Time: 55 minutes

Chicken Wings:
1 pounds chicken wings and drumettes (party wings)
1 teaspoon baking powder
1 teaspoon kosher salt

Honey Lime Sauce:
4 tablespoons unsalted butter
zest and juice of 1 lime
2 tablespoons ketchup
1 tablespoon hot sauce
1 tablespoon brown sugar
1 tablespoon honey
½ teaspoon kosher salt
1/4 teaspoon ground pepper
2 scallions, finely chopped green only
1 tablespoons cilantro, finely chopped

Directions:
Preheat oven to 450 degrees. Line 1 baking sheet with aluminum foil and top with a wire rack.

Completely dry chicken wings with paper towels. In a large bowl or resealable bag, add wings and sprinkle with baking powder and salt and toss until thoroughly coated. Place wings on rack, making sure they don’t touch.

Bake wings on the middle rack for 20 minutes, then flip over and cook until crispy, about 20 more minutes. While wings are cooking make sauces.

Honey Lime Sauce:
In a small saucepan, melt butter. Whisk in zest, lime juice, ketchup, hot sauce, honey, brown sugar, salt, and pepper, until combined. Gently simmer for 1 minute and let thicken. Turn off heat.

Pour into a large bowl, add cooked wings and toss well. Plate and top with scallions and cilantro.
