Ingredients:
– 1 pound of diced chicken thighs
– 13 ounces of Cajun andouille sausage (you can use Turkey sausage as an alternative)
– 1 1/2 cups of medium to long grain rice
– 2 diced celery stalks
– 1 diced green pepper
– 1 diced yellow onion
– 4 cloves of minced garlic
– 1 tablespoon of tomato paste
– 1/2 cup of crushed or diced tomatoes
– 28 ounces of chicken broth
– 1 tablespoon of avocado oil
– 2 tablespoons of all-purpose seasoning
– 2 teaspoons of garlic and herb seasoning
– 2 teaspoons of Cajun seasoning
– Green onions for garnish
