Key Components
❤️ 1 poultry breast (approximately 200 g)
❤️ 300 g green peas (frozen or fresh)
❤️ 500 ml crushed tomatoes
❤️ 1 sizable onion, cubed
❤️ 2 carrots, peeled and cubed
❤️ 2 Tbsp dried Italian seasonings & spices
❤️ a handful of dill, finely chopped

Essential Pantry Components
❤️ 4 Tbsp olive oil
❤️ Salt, as needed
❤️ Pepper, to your liking

Directions
1. Slice poultry breast into small portions. Season with salt, pepper, and half of the Italian seasonings. Heat 2 tablespoons of oil in a large pot over moderate heat. Introduce the poultry pieces and sauté until they turn golden on either side, roughly 3-4 minutes per side. Take out the poultry from the pot and keep it aside.
2. In the same pot, pour in the remaining oil. Include the diced onions and carrots, cooking until the onions become translucent and the carrots commence softening, around 5 minutes.
3. Pour in the crushed tomatoes, together with the rest of the Italian seasonings. Mix thoroughly. Allow the mixture to simmer.
4. Reincorporate the poultry pieces into the pot, submerging them in the tomato mixture. Cover and allow it to simmer for 20-25 minutes, or until the poultry is thoroughly cooked.
5. Introduce the green peas into the pot and stir. Let it simmer for an additional 5 minutes. If using frozen peas, ensure they are defrosted before adding.
6. Integrate the finely chopped dill and shut off the heat.
Taste and tweak the seasonings with salt and pepper as required.
