For chicken marination:
Ingredients:
Boneless chicken: 250 grams
Salt: ½ teaspoon
Black pepper powder: 1/4th teaspoon
Turmeric powder: 1/4th teaspoon
All purpose flour (maida): 5 tablespoons
Curd: 2 tablespoons
Egg: 1 whole
Ginger garlic paste: 1 teaspoon
Oil: for frying
For final preparation:
Ingredients:
Oil: 2 tablespoons
Butter: 40 to 50 grams (3 small pieces)
Peeled and chopped garlic: 2 tablespoons
Whole green chillies: 5
Curd: ½ cup
Salt: ½ teaspoon
Turmeric powder: ½ teaspoon
Coriander (dhaniya) powder: ½ teaspoon
Cumin (zeera) powder: ½ teaspoon
Red chilli powder: 1 teaspoon
Red chilli sauce: 1 teaspoon
Vinegar: 1 teaspoon
Soya sauce: 1 tablespoon
Chopped coriander: 1 tablespoon
For chicken marination:
Procedure:
1. Make thin strips of washed boneless chicken.
2. Add ½ teaspoon salt, 1/4th teaspoon black pepper powder, 1/4th teaspoon turmeric powder, 5 tablepoons all purpose flour or maida, 2 tablespoons whipped curd, one egg and one teaspoon ginger garlic paste to the chicken strips.
3. Mix thoroughly and keep this aside for marination for about one hour.
4. After one hour of marinating the chicken, add oil for frying.
5. When the oil is hot, mix the marination again and lower these chicken strips into the oil.
6. Fry on both sides till they turn light brown. Keep these fried chicken strips aside.
Final preparation:
Procedure:
1. Remove the excess oil from the pan and leave only 2 tablespoons of oil in the pan.
2. Add 3 small pieces of butter that’ll amount to 40 to 50 grams approximately.
3. Add 2 tablespoons peeled and chopped garlic .
4. Add 5 whole green chillies, de-seeded and slit vertically.
5. Add ½ teaspoon turmeric powder and ½ teaspoon salt. Stir for 30 seconds.
6. Add ½ cup whipped curd, 1 teaspoon red chilli powder, ½ teaspoon coriander or dhaniya powder and 1/2 teaspoon cumin or zeera powder.
7. Stir fry for one minute.
8. Add 1 teaspoon red chilli sauce, 1 teaspoon vinegar and 1 tablespoon soya sauce.
9. Add fried chicken pieces and mix thoroughly but delicately.
10. Switch off the flame and garnish with 1 tablespoon chopped coriander.
