Achari Chicken from Maimoona Yasmeen’s Recipes
Ingredients: for 4 to 5 servings
For marination:
Chicken (with bones): 500 grams
Salt: ½ teaspoon
Turmeric powder: ½ teaspoon
Red chilli powder: 1 teaspoon
Ginger garlic paste: 1 teaspoon
Whipped curd: ½ cup
Procedure:
1. Wash medium sized pieces of chicken. Drain the excess water.
2. Add salt, turmeric powder, red chilli powder, ginger garlic paste and whipped curd. Mix well.
3. Keep these chicken pieces aside for marination for about an hour.
For spice powder:
Ingredients:
Coriander seeds (sabith dhaniya): 1 teaspoon
Cumin seeds (sabith zeera): 1 teaspoon
Mustard seeds (rai): ½ teaspoon
Black seeds (kalonji): 1/4th teaspoon
Fenugreek seeds (methi dana): ½ teaspoon
Procedure:
1. To a frying pan, add coriander seeds, cumin seeds, mustard seeds, fenugreek seeds or methi and black seeds. Roast till light brown.
2. Remove from the pan and grind all these into a fine powder.
Final preparation:
Ingredients:
Marinated chicken pieces
Spice powder
Cooking oil: 3 tablespoons
Onion (big): 1
Tomatoes:2
Curry leaves: a handful
Ginger garlic paste: 1 tablespoon
Turmeric powder: ½ teaspoon
Salt: ½ teaspoon
Red chilli powder: 2 ½ teaspoons
Chopped coriander: a handful
Chopped mint leaves: a handful
Lemon: ½
Procedure:
1. After one hour of marinating the chicken, add oil to a pan.
2. Add sliced onion.
3. Stir fry till the onions turn light brown.
4. Add curry leaves, ginger garlic paste, turmeric powder.
5. Add the marinated chicken pieces and chopped tomatoes.
6. Mix well, close the lid.
7. Cook on medium to high flame till the chicken gets semi tender.
8. Stir fry till the oil separates.
9. Add salt, spice powder, red chilli powder, chopped coriander, chopped mint leaves and 2 ½ cups water. Mix well. Close the lid.
10. Simmer till the chicken gets tender and soft.
11. Add lemon juice. Mix well.
Achari Chicken is ready. Serve with rice or chapatti or phulka.
