3 (6 ounce) chicken breasts, butterflied or pounded thin
salt and pepper to taste
2 tablespoons roasted jalapenos (or fresh, or pickled), diced
1/4 cup cream cheese
1/4 cup colby jack or cheddar cheese, shredded
6 slices bacon
Sundried Tomato, Spinach, and Cheese Stuffed Chicken
Two large chicken breasts
1tbs garlic powdwer, onion powder and poultry seasoning
1tbs olive oil
salt and pepper to taste
1/2 cup sundried tomatoes
1/2 cup roughly chopped spinach
1/2 cup feta cheese
1/2 cup mozzarella cheese
Crusted Chicken Stuffed with Ricotta, parsley, and smoked red peppers.
2 large chicken breasts
1 cup of low fat ricotta cheese
1/2 cup smoked red peppers
2 tbsp Parmesan cheese, grated
1 tbsp fresh parsley
chopped 1 clove of garlic
salt to taste
Dash of oregano
Italian seasoned bread crumbs crumbs, 2 tsp olive oil
