Nutritious Millet Pancake
Millet pancakes offer a tasty and healthy alternative to traditional pancakes. Ingredients:
- 2-3 Potatoes
- 1⁄2 cup Carrots
- 1⁄2 cup Spring Onions
- 1⁄2 cup Chopped Onions
- 1 tbsp Diced Fresh Coriander
- 1 tsp Green Chili
- 1 cup Sorghum Flour
- 1⁄2 cup Chickpea Flour
- 2 tbsp White Sesame Seeds
- 1 tbsp Salt
- 1 tsp Turmeric
- 1 tsp Garam Masala
- 1 pinch Black Pepper
- 1 cup Water
- 1⁄2 tbsp Oil
Method:
To get started, prepare all your ingredients: potatoes, carrots, spring onions, coriander, onions, green chilies, sorghum flour, chickpea flour, white sesame seeds, salt, turmeric, garam masala, black pepper, water, oil, and tomato ketchup.
Begin by washing and peeling the potatoes, then grating them into a bowl. Rinse the grated potatoes with water to remove excess starch.
Drain the grated potatoes to remove excess water, then squeeze them to eliminate any remaining moisture. Transfer the squeezed potatoes to a separate bowl.
Add grated carrots, chopped spring onions, coriander, onions, and green chilies to the bowl with the potatoes. Combine sorghum flour and chickpea flour with the mixture, and sprinkle in white sesame seeds for texture.
Season the batter with salt, turmeric, garam masala, and black pepper. Adjust the consistency by adding water gradually until it reaches a medium thickness. Let the batter rest while you heat a flat pan.
Heat the pan, spread oil evenly, and pour a spoonful of batter to create a medium-thick pancake. Sprinkle sesame seeds on top for an additional layer of flavor and texture.
Cook the pancake on medium to low heat until golden brown. Flip and cook the other side until crispy. Repeat with the remaining batter.
