Serves: 4-5 individuals
Prep Time: Requires 10 hours for rice soaking.
Cooking Time: Approximately 30 minutes
Ingredients:
- Rice – 1 cup
- Water – as needed
- Salt – ½ tbsp
- Ginger – ½ inch piece
- Green chilli – 2 pieces
- Boiled Potatoes – 2 pieces
- Semolina (Suji) – 2 tbsp
- Eno – 1 tsp
- Onion – ½ cup
- Grated Carrot – ½ cup
- Chopped Capsicum – ¼ cup
- Chopped Coriander – 1 tbsp
- Oil – 2 tbsp
- Sesame Seeds – 1 tbsp
Cooking Steps:
- Start by washing the rice and letting it soak overnight.
- After soaking, drain the water and place the rice in a blender.
- Add ginger, salt, green chillies, boiled potatoes, and a bit of water. Blend into a smooth batter.
- Transfer the batter to a bowl, add semolina, eno/fruit salt and mix.
- Include onions, capsicum, carrots, coriander and gently combine.
- Heat a flat pan, add oil, a sprinkle of sesame seeds, and pour the batter.
- Cover and cook on medium-low flame for 1-2 minutes.
- Once one side is crispy, flip and cook the other side.
- Your rice pancakes are now ready to be served.
