Dosa Egg Wraps
Serves-2- 3
Ingredients-
2 cups readymade dosa batter
Salt, to taste
2 eggs
½ cup roasted peanuts
1 tbsp red chilli powder
1 onion, finely chopped
¼ cup green saag (Green Amaranth Leaves)
¼ cup red saag (Red Amaranth Leaves)
Method-
Grind together roasted peanuts, red chilli powder and salt to get gun powder.
In a bowl mix together dosa batter, salt and water.
Heat a pan with little oil and using a half cut onion spread it in the pan.
Then pour the dosa batter on the greased pan.
Crack an egg directly on the dosa and break the yolk.
Next add both the leaves, the gun powder mix and a little salt.
Once cooked roll up the dosa.
Serve hot with coconut chutney.
Coconut Chutney
½ coconut
2 green chillies
Salt, to taste
Tadka-
1 tsp mustard seeds
1 tbsp channa dal
5-6 curry leaves
1 tbsp oil
Method-
In a blender mix the coconut, salt and green chillies, with water as required.
Once the chutney is ready in a small pan pour little oil and add mustard seed, chana dal, and
curry leaves. Pour this mix over the white chutney.
