Hi friends, today let’s make an easy and healthy breakfast recipe, which is an egg Paratha.
To start with the recipe, first sauté finely chopped onion, carrot and capsicum in little oil along with some chilli flakes and pepper powder to taste..

You can also add a little garam masala to taste at this point, which is totally optional.

Next, break in 3 eggs into a bowl and whisk the eggs really well.. Once the eggs are whisked, add finely chopped coriander leaves and mix.

Once the coriander leaves and eggs are mixed well, add a cup of wheat flour and mix into a thick gooey mixture.

Into the batter, add 1 ¼ cup or enough milk to turn the batter into a runny texture..

Mix the milk really well with the batter until no lumps are left and then add the sautéed vegetables into it and season it with some salt to taste.

With this, our batter is now ready to make the parathas.

To prepare the parathas, heat a pan and grease the pan with some oil and then pour a little batter into the pan and swirl the pan around to get round parathas .. The batter should be runny enough to be swirled around in the pan . So, add milk accordingly, until you get desired consistency.

Roast the parathas until golden on both the sides and transfer to a serving plate..

You can also make the parathas thick, in a small pan, but make sure to keep the lid closed so that it cooks through..

To make the egg paratha, once the Paratha is cooked well, break an egg onto the Paratha and sprinkle some salt and chilli flakes to taste..

Again close with a lid so that the egg cooks a little..

Once the egg is a little cooked, add another layer of the batter and close it with the lid and wait for a few more seconds, and flip and cook on the other side.

Once cooked on both the sides, you can transfer it into a serving plate.

You can also make this a little thick parathas by adding a little extra batter into the small pen and closing it with a lid so that it cooks through..
