This is a Soft and spongy Instant oats Dhokla, a steamed cake made in a combination with semolina (sooji) , oats and spices. A perfect breakfast or tea-time snack that is light in the tummy. Dhokla is an Indian snack from the state of Gujarat. Dhoklas are mainly made with chickpea flour ( named khaman) and with semolina. Here i have tried a healthy version of dhokla made with oats and sooji.

➡️ INGREDIENTS:
Oats 1/2 cup
(ஓட்ஸ்)
Rava / sooji 3 tbsps
(ரவா)
Gram / besan flour 3 tbsps
(கடலை மாவு)
Salt as required
(உப்பு)
Curd 1 cup
(தயிர்)
Ginger small piece
(இஞ்சி நறுக்கியது)
Turmeric powder 1/2 tsp
(மஞ்சள் தூள்)
Coriander leaves (chopped) few
(கொத்துமல்லி தழை)
Baking soda or eno 1/2 tsp
(சமையல் சோடா)
Oil as required
(எண்ணெய்)
Chilli powder 1/4 tsp
(மிளகாய் தூள்)
FOR SEASONING:
Mustard seeds 1/2 tsp
(கடுகு)
White sesame seeds 1/2 tsp
(வெள்ளை எள்)
Green chili (chopped) 1
(பச்சை மிளகாய்)
Curry leaves few
(கறிவேப்பிலை)
Asafoetida 1/4 tsp
(பெருங்காயம்)

➡️ METHOD:
1. Take half cup of oats and dry roast it until a nice aroma comes.
2. Allow it to cool completely and transfer this to a mixie jar. Make it into a powder.
3. Transfer the oats powder into a bowl and add sooji, gram flour, salt ,curd and mix everything together.
4. Close and rest the batter of 10 minutes.
5. Then add a small piece of chopped ginger, turmeric powder, chopped coriander leaves and baking soda.
6. Add enough water and mix everything well to get a batter shown in video.
7. Take a bowl, grease it with oil and pour the batter over it.
8. Sprinkle some chilli powder on the top.
9. Steam cook for 15 to 20 minutes.
For tempering:
10. Add some oil in the pan and let it heat.
11. Then add mustard seeds, sesame seeds, chopped green chillis, asafoetida and few curry leaves. Saute for a minute .
12. Now take the dhokla out from the bowl and add the tempering over the top of it.
13. Cut them into pieces and serve.
👉Note:
We can replace the baking soda with eno fruit salt.
We can add a tbsp of sugar to the tempering to get a authentic dhokla taste.
