Zucchini Rollatini with Spinach Ricotta Cheese Filling:

Ingredients:
1 Zucchini
1/2 cup marinara sauce
1/2 cup ricotta cheese
1/4 cup shredded mozzarella cheese
1/2 teaspoon minced garlic
1/2 teaspoon sliced basil
2-3 tablespoons rosemary & Oregano (few sprigs)
Oil to grease the tray
Salt to sprinkle
Directions:
1. Slice zucchini lengthwise.
2. Grease the baking tray. Arrange zucchini slices & sprinkle salt over & leave it for 10-15 minutes.
3. Bake in the oven at 400 degree F for 8-10 minutes to soften (for us to be able to roll)
4. In a bowl, add ricotta & mozzarella cheese & mix.
5. Add garlic, basil, rosemary & oregano and mix.
6. Spread the mixture over soften zucchini & roll.
7. Add marinara at the bottom of a baking dish & spread. Arrange zucchini rolls. Top with marinara, shredded mozzarella & sprinkle rosemary. Bake it in the Oven at 400 degrees F for 10-15 minutes or until it starts browning & done.
8. Take out & Enjoy!
Please Note: Oven used is 2100 Watts. Please find strength of your oven to set time.
