This simple appetizer is easy to make and is a perfect starter that will please your party guests, with its vivid colors and fabulous taste. Your guests will leave the party smiling and will surely call you the next day for the recipe!!
INGREDIENTS: (Makes 12)
Mini Peppers – 12
Stuffing I —
Goat Cheese – 2 oz or 58 gms
Parmesan Cheese – 4 Tbsp
Jalapenos, chopped – 1 Tbsp
Garlic, chopped – ¼ Tsp
Black Pepper – ¼ Tsp
Stuffing II —
Potatoes, boiled & mashed – 1/3 Cup
Cream Cheese – 2 Tbsp
Salt – ¼ Tsp
Black Pepper – ¼ Tsp
Onions, chopped – 1 ½ Cups
Herb of Choice – ½ Tsp
Stuffing III —
Tofu, crumbled – ½ Cup
Onions, chopped – 2 Tbsp
Sundried tomatoes – ½ Tbsp
Jalapenos, chopped – ½ Tbsp
Cream Cheese – ½ Tbsp
Salt – ¼ Tsp
Black pepper – 1/8 Tsp
METHOD:
1. Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper and set aside.
2. Cut all the peppers in half, lengthwise and remove any seeds. Lay them cut-side-up on the baking sheet. Spoon the 3 different stuffing into the center of each pepper half.
3. Sprinkle red chili flakes on peppers with potatoes stuffing if you like, but it’s not necessary. Also sprinkle grated mozzarella cheese on peepers with potato stuffing.
4. Bake for 15 minutes, then serve warm.
