Stuffed Capsicum
Serves- 2-3
Ingredients-
1 tbsp oil
½ tsp mustard seeds
1 tsp cumin seeds
7-8 curry leaves
2-3 green chillies, finely chopped
1 onion, finely chopped
4-5 Boiled potatoes
½ cup curd
½ tsp turmeric powder
Salt, to taste
2-3 tbsp coriander leaves
4-5 capsicum
Method-
In a pan heat some oil.
Add mustard seeds, cumin seeds, curry leaves, chillies and onion, saute well.
Next add potatoes, curds, salt and turmeric powder.
Make sure potato is soft.
In a kadai pour some oil and heat.
Add some Cumin Seeds and curry leaves to the oil.
Cut the capsicum in half and saute in the oil, till it becomes soft.
Stuff the potato mix in the capsicum.
Once cooked, serve hot with roti and garnish with curry leaves.
