To make enough Parmesan potato snacks for 4-6 people, you’ll need:
3 tbsp butter, melted
2 tbsp Parmesan cheese
1 tsp garlic powder
1 tsp thyme leaves
salt and freshly ground black pepper
8-10 gold potatoes sliced thin (about 1/16 inch thick)
Now to get started, you need to preheat your oven to 350°F. Then butter your 12-cup muffin tin and set it aside.
Cut your potatoes into thin slices then put into a large bowl. Add the melted butter, Parmesan cheese, and your spices. Toss the mixture to coat the potatoes evenly.
Now layer the potatoes into stacks and place them into the muffin cups. Sprinkle with more salt and pepper to taste.
Now bake your Parmesan potato snacks for 55-60 minutes or until the edges are golden brown and the center is tender.
Take them out of the oven and let the potato snacks sit for about 5-minutes before serving. Garnish with some extra Parmesan cheese and thyme.
