INGREDIENTS
3 big potatoes, peeled and grated
35g (3 tbsp) of cornstarch
Vegetable oil for deep-frying
Rocket and eggs for the stuffing
METHOD
1. Wash grated potatoes in cold water until clear. Pat dry the potatoes thoroughly and combine with cornstarch.
2. Fill a frying mold with a portion of potatoes and enclose with the other half.
3. Deep fry in preheated oil (180C/350F) for 5-7 minutes or until they turn golden and crisp. Remove from the mold.
4. Stuff each nest with rocket and hard-boiled eggs.
