I shared with you how to make garlic and olive oil crostini now we need something delicious to top that off with. There are so many options and I am going to show you one today and another later in the week! Today it’s fresh tomato bruschetta! This is nothing more than a fresh tomato salad that is dressed with olive oil, garlic and herbs. The juice it creates is perfect for sopping up with a crispy on the outside, tender on the inside piece of crostini!

This is the perfect summer appetizer or light lunch. My family loves bruschetta any way they can get it, but today I am preparing a super simple version that is great made with fresh garden tomatoes from your back yard or the local farm stand. I used plum or Roma tomatoes in my salad along with some organic orange grape tomatoes for additional sweetness. I added some chopped garlic, olive oil and seasonings. I have also used onion in the past and love it with the bite of fresh sweet onion, but my daughter Micah does not enjoy those so I left them out. Sometimes less is more. Stir this up and then top off your crostini and enjoy! Don’t forget to sop up that good juice with the bread for really delicious finish!
Bruschetta can be made a lot of different ways. This is the most simple one and my family loves it. I have added onion, extra garlic, chopped red and green bell peppers along with chopped Calamata olives and it makes a delicious version. You can also add a bit of olive tapenade into the mix for a nice salty and briney edge to your topping.
This is such a simple appetizer that everyone loves. Super fresh and delicious and not to heavy and not hard to make. Just chop a few tomatoes and this is almost done. I hope that you will give this a try sometime soon with friends or just family. No matter how you try it this will be delicious.!
