Cheesy Potato Cups – Healthy And Delicious Party Appetizer Recipe – Tayde's Kitchen

Amazingly delicious and super easy appetizer, kids snacks recipe. Vegetarian snack recipe. Does not require deep fried dough cups, so it’s healthy as well! Why look around for more appetizer recipes when you get the best one here? Stuffed Potato Cups are easy evening snacks to make at home. It is quick Indian Vegetarian party starters /appetizer recipes made with potato. Call it what you want – Stuffed potato cups, Loaded potato cups, loaded potato skins, stuffed potatoes, potato cheese cups or cheesy potato cups – doesn’t matter, as long as you make them and satisfy your belly.

What makes it healthy and different from others is the fact that I am not going to deep fry the potatoes. This instantly boosts the health rating for my cheesy stuffed potato cups appetizer recipe. Cheese can be avoided in case you are too much of a health freak. But I wouldn’t do that ! What is life without cheese?

So my dear friends, here is the detailed Cheesy Stuffed Potato Cups Recipe –

Ingredients & Procedure
STEP 1: Prepare the stuffing
1. In a bowl, take green/red/yellow peppers/capcisum, corn, chilli flakes or crushed red pepper, salt (black salt preferred), chat masala and oregano. Mix it well.

2. In a pan, ad half tablespoon butter. Add the above mixture to it and saute for 1-2 minutes on high flame. High flame will make sure that the vegetable get slightly cooked while retaining the crunch, which would be perfect for this recipe.

3. Allow it to cool and add little grated cheese. Just a little and totally optional. But if you are going to add cheese, make sure that the mixture is not hot. We don’t want the cheese to melt at this step.
4. Our stuffing is ready!!

STEP 2: Make Potato Cups
1. Use boiled and peeled potatoes. Slice the potatoes vertically into halves.

2. Scoop the inside of the potatoes with a spoon carefully. Be extremely gentle. Be careful not to break the potato into multiple pieces. We would like to have nice cups for our stuffing, as shown in the youtube video.

STEP 3: The last step
1. Add half tablespoon salted butter in a pan and place all the potato cups upside down. Cook them for 3 min on medium flame without turning them upside down.
2. After 3 min, you will see a nice brown colored crispy layer on the potato cups. This is the right time to turn them over.

3. After you turn them over, immediately fill the cups with the stuffing. Then top all of them with grated cheese.

4. Place the lid and let it cook for 4-5 minutes or until the cheese melts.
