Green Bean Salad
1lb green beans, trimmed and steamed
1 cup cherry tomatoes, halved
½ red onion, finely sliced
½ cup feta cheese
3 tbsp olive oil
3 tbsp balsamic vinegar
salt and pepper
In a large bowl combine green beans, tomatoes and red onion.
Toss with olive oil, balsamic vinegar, salt and pepper.
Finish with crumbled feta cheese.
Enjoy!
Veggie Pasta Salad
1 cup broccoli florets
1 small zucchini
1 small summer squash
1 cup cherry tomatoes, halved
1lb farfalle, cooked and drained
1 lemon, zested and juiced
3 tbsp olive oil
salt and pepper
In a large bowl combine farfalle, broccoli, zucchini, summer squash
and tomatoes.
Toss will lemon juice, olive oil, salt and pepper.
Enjoy!
Shrimp Salad
1 cup fresh pineapple, diced
1 red bell pepper, diced
½ red onion, finely diced
1 avocado, diced
1lb shrimp, cooked
2 limes, juiced
lettuce
In a large bowl combine pineapple, pepper, avocado, onion and
cooked shrimp.
Toss with lime juice.
Serve over a bed of lettuce.
Enjoy!
