RECIPE
Carrot Cake
● 5 Carrots
● 8 Dates
● ½ tsp. of minced ginger
● ¼ cup of shredded coconut
● 1 tsp. of Nutmeg
● 1 tbsp. of Cinnamon powder
(Cashew cream frosting)
● 1 cup and ½ of cashews
● ¼ cup of coconut water
● 1 tablespoon of vanilla powder
● 4 Dates
● Juice of half a lime
Wash and rinse all your veggies.
We recommend using a food processor and/or a blender.
Put the carrots in a food processor until they are fully shredded. Stop the food processor and change the blade to an S-formed blade.
Add the dates, ginger, shredded coconut, nutmeg and cinnamon and process for 1 or 2 minutes.
With the help of your spatula, add the mix in a cake pan and spread it until it is completely smooth and let it sit in the refrigerator for 2 hours.
Blend cashews, coconut water, dates, vanilla powder and lime juice until you achieve a creamy consistency.
Take out the cake from the fridge and carefully remove the cake from the pan.
Spread the cashew frosting on top and on the sides of your cake until it is fully covered and smooth.
You can add bits of nuts to finish decorating your cake.

Tomatoes Filled with Guacamole
● 6 tomatoes
(Guacamole)
● 2 Avocados
● 2 medium diced tomatoes
● 1 cup of chopped cucumber
● ½ chopped Radish
● 4 sprigs of cilantro
● ¼ cup of chopped red onion
● 1 lime
● ½ serrano chili
Wash and rinse all your veggies.
Cut the avocado in half; remove the seed and scoop out the avocado from the peel.
In a big bowl and using a fork, smash the avocado until smooth consistency.
Add diced tomatoes, cucumber, radish, cilantro, onions, serrano chili, squeeze lime over the ingredients and mix together. Set aside.
Cut the top part of the tomatoes and with a spoon; take out the membranes and seeds until fully empty.
With a spoon, fill each tomato with guacamole and garnish with cilantro.
