Love Ceviche? Well, watch this short video to see how Chef Nathan Lippy takes Ceviche to the next level using fresh citrus, salmon and Wholly Guacamole Avocado Verde. FULL recipe:
INGREDIENTS:
1 pound fresh salmon, boneless and skinless, diced
The juice of 1/2 grapefruit
The juice of 2 limes
The juice of 1 orange
1/2 cup radishes, sliced
1/2 cup alfalfa sprouts
1 tablespoon lime zest
1 bunch cilantro
1 teaspoon minced garlic
1 package Wholly Guacamole Avocado Verde dip
1 sliced baguette, toasted
salt and pepper
1/2 cup coconut oil
Olive oil
INSTRUCTIONS
1. Using a large mixing bowl, add the salmon, grapefruit juice, juice of 1 lime, orange juice, 3 tablespoons Wholly Guacamole Avocado Verde dip, a drizzle of olive oil and salt and pepper. Stir to evenly coat the salmon. Cover and place in the refrigerator for at least 15-20 minutes.
2. In a food processor, add the cilantro, juice of 1 lime, garlic, coconut oil and salt and pepper to taste. Blend on high for 60 seconds and reserve on the side for garnish.
3. Once your salmon has had a chance to marinate, remove it from the refrigerator. To plate, add a tablespoon of the salmon then layer a few slices of radish on the side with a pinch of sprouts. Repeat the process. Place a couple of pieces of toasted baguette on the side and drizzle the whole plate with the cilantro lime oil. Serve chilled.
