Lentil patties, also known as lentil fritters, offer a delightful and nutritious option that can be prepared in under 30 minutes.
These patties are satisfying and packed with nutrients, providing a good source of protein and fiber to help keep you feeling full and energized.
INGREDIENTS:
– 2 cans (15 oz each) (460 grams) of lentils—green, black, or brown (alternatively, use 3 cups of cooked lentils or 1 cup of dried lentils boiled in 4 cups of water with 1 teaspoon of salt until soft).
– 4 tablespoons of all-purpose flour or chickpea flour
– ¼ cup (8 grams) of finely chopped parsley, plus 2 tablespoons of cilantro (optional)
– 1 medium onion, coarsely chopped
– 3 cloves of garlic, coarsely chopped
– 1 teaspoon of ground cumin
– 1 teaspoon of ground coriander
– 4 tablespoons of nutritional yeast or grated parmesan cheese
– 1 teaspoon of salt
– ⅛ teaspoon of black pepper
– 4 wedges of lemon
OVEN METHOD: Place the patties on a baking sheet lined with parchment paper, and bake in a preheated oven at 400°F (200°C) for around 20 minutes, or until they are golden brown.
PAN-FRY METHOD: In a nonstick skillet, heat 2 tablespoons of olive oil for every four patties. Cook the fritters on medium heat for about 4 minutes per side, flipping them once.
AIR-FRY METHOD: Lightly brush the air fryer basket with olive oil. Arrange the patties inside, brush them with more olive oil, and air fry at 400°F (200°C) for 10 minutes.
