This Pineapple Curry will give you the perfect balance of sweet, sour and spicy.
Ingredients:
1 cup coconut
2 dried red chilli
1/2 tsp turmeric powder
Hing, a pinch
Salt to taste
1/2 cup tamarind water
Water
1 cup tomatoes
1.5 cup pineapple
2 tbsp coconut oil
Salt
1/2 tsp garam masala
Method:
Place the coconut, dried red chilli, turmeric powder, hing, salt, tamarind water and water in a blender jar.
Grind the mix to a fine paste.
Place tomatoes and pineapple in a hot pan.
Add some coconut oil and saute it.
Now add the coconut mix.
Mix everything well, then add salt and garam masala.
Cook the curry until done.
