These are charming, cheesy bread patties crafted with only a few components. The bread provides a crispy texture on the surface and they are perfect for creating as a starter or for a gathering or celebration, as you can put them together in advance and they don’t require too much time to fry. Replace the dairy cheese with vegan cheese and plant-based milk instead of the dairy milk used.
Components:
Makes approximately 10-12 patties.
2 cups Corn
3/4 cup Green onions
1/2 tsp Salt or to your preference
2/3 tsp Ground Pepper
2-3 Green peppers, if desired
1 cup or 200g Mozzarella and/or Cheddar cheese
8-10 Bread slices
Oil for frying
Milk for soaking bread
Gear needed for this recipe:
Chopping board
A bread knife
Rolling pin
Mixing bowl
Broad dish for the milk
Technique:
- We’ll commence by preparing the bread. Trim the edges of your bread slices with a knife. If desired, slice your bread into squares so when you create the patties, you get a triangle. I generally utilize the excess bread to make breadcrumbs! If you prefer to keep them as rectangles, you can mold the patties into rectangular shapes.
- Flatten the bread to achieve a thin outer layer. Use a rolling pin to flatten each bread slice. Set aside.
- In a mixing bowl, combine corn, green onions, cheese, ground pepper, and salt. Mix thoroughly and set aside.
- Pour the milk into a broad, flat bowl or plate. Keep a plate handy to place your prepared patties, the bread slices, and the corn and green onion mixture.
- One by one, dip the bread into the milk and gently squeeze to remove excess milk.
- Place the bread on the board, add a spoonful of the mixture, and fold into your preferred shape.
- Press the bread firmly to seal, using a bit of milk if required. You can use a fork to firmly seal the patties and prevent the filling from spilling while frying.
- In a pan, heat oil for frying over medium low heat. Turn the patties once each side browns and achieves a golden color on both sides. Repeat for each patty, then place them on a plate lined with paper towels to absorb excess oil.
- Serve promptly! Reheat in the oven to restore the crispy bread crust. Enjoy alone or with condiments like ketchup, green chutney, or your favorite sauces.
