Butternut Squash Carrot Soup

**Ingredients**
– 1 small butternut squash, halved and seeded
– 2 large carrots, peeled and roughly chopped
– 3 vine-ripe tomatoes, halved
– 1 yellow onion, roughly chopped
– 1 head of garlic, top cut off
– ½ inch ginger, optional, minced
– 2 cups vegetable broth or water
– Salt and pepper, to taste, used generously
**My Additions**: 15 oz can of white beans, ⅓ cup nutritional yeast in soup
**Cashew Cream Sauce**:
– ⅓ cup soaked cashews (12.3G protein)
– 3 tbsp nutritional yeast (7.05g protein)
– 1 tbsp rice wine vinegar
– 1/2 tsp salt
– ⅓ cup water
– 1 tsp white miso

**Ingredients**
*Salad Base*
– 1 (15 oz) can chickpeas, drained and rinsed
– 1 lb delicata squash or acorn squash
– 1 lb Brussels sprouts, thinly sliced
– 1/2 medium red onion, thinly sliced
– 3 tbsp avocado oil or another neutral high-heat oil
– 1 tbsp cornstarch
– 1 1/2 tsp garlic powder
– 1 tsp ground coriander
– 1 tsp Chinese five spice
– 2 tsp fresh thyme
– 1/2 tsp fennel seeds
– 2 tsp maple syrup
– Kosher salt to taste
– Cooked rice or quinoa for serving
*Cilantro Lime Tahini Sauce*
– 1/4 cup tahini
– 1 tbsp maple syrup (or more, to taste)
– 1 clove garlic, grated
– 1 tsp Dijon mustard
– 1/4 cup cilantro, finely minced
– Juice and zest of 1 lime
– 3–4 tbsp cold water
Roasted Butternut Squash Mac and Cheese

– 1/2 medium butternut squash, seeds removed
– 1 large shallot, quartered
– 8 whole garlic cloves, unpeeled
– 8 sprigs fresh thyme, optional
– 1/2 cup raw unsalted cashews
– 12 sage leaves
– 1 cup unsweetened cashew milk
– 1/2 cup nutritional yeast
– 1 1/2 tbsp tapioca starch
– 1/2 tsp smoked paprika
– 1 tbsp lemon juice
– 2 tsp white or yellow miso paste
– 1 tsp Dijon mustard
– 8 oz of pasta (I prefer small shells or macaroni)
– Avocado oil for roasting
– Kosher salt and pepper to taste
*Breadcrumb Topping*
– 1/2 cup panko breadcrumbs
– 2 tbsp nutritional yeast
– 1 1/2 tbsp oil
