Vegan Sausage Mixture:
1 sizable floret of cauliflower
16 ounces white mushrooms
1 petite yellow onion
1 measurement of walnuts
3 tablespoons tomato paste
Flavoring:
3 tablespoons coconut aminos
1 1/4 teaspoons garlic granules
3 tablespoons dried sage
1 1/2 teaspoons dried thyme
1/4 teaspoon ground nutmeg
2 tablespoons ground fennel
1/2-3/4 teaspoon chili flakes
1/2 teaspoon black pepper
1 1/2 teaspoons salt, or to your liking
* To craft a variation devoid of nuts, exclude walnuts and add an extra 8 ounces of white button mushrooms, coarsely chopped to retain some consistency.
** If mushrooms are not desired, substitute with an equivalent amount of jackfruit, processed into smaller sections.
Roughly cut all vegetables using a food processor. Consider a coarser chop for mushrooms to achieve a more substantial texture. (You may need to process in batches)
Coarsely cut walnuts together with tomato paste until mixed.
Incorporate vegetables and mushrooms, and sauté over medium-high heat until moisture begins to emerge (roughly 5 minutes). Crank up the heat.
Stir until most of the liquid has dissipated, then add coconut aminos and seasoning. Maintain high heat for another 5-10 minutes until all moisture has evaporated, with no liquid residue in the pan.
* Adjust the heat level between medium and high on your stovetop according to the evaporation speed.
Switch off the heat and add the walnut and tomato paste blend. Thoroughly mix to merge.
Add the mixture to your preferred dish.
This preparation keeps well in the refrigerator for 3-5 days or can be stored in the freezer. I personally can’t vouch for longer durations since mine is always utilized within a matter of weeks!
Breakfast Sausage Recipe:
2 cups of Vegan Sausage Mixture
2 tablespoons psyllium husk POWDER
2 tablespoons arrowroot powder
2 tablespoons chickpea flour
2 teaspoons dried sage
1 teaspoon fennel
1/2 teaspoon thyme
1/2 teaspoon garlic granules
Salt, as per your preference
Blend all ingredients in a bowl until evenly mixed. Shape into patties. Bake at 350°F for 20 minutes. Enjoy!
