Simple and Delicious Salad Recipe! #saladrecipe

Looking for a quick and tasty salad recipe to try out?


If you’re a fan of my other salads, you’ll definitely want to give this one a shot.

The vinaigrette has a delightful peanut flavor, and depending on your preference for spiciness, you can increase the amount of chili flakes, fresh chilis, or sriracha for an extra kick!

Moreover, the vinaigrette can also double up as a marinade or sauce, or can even be enjoyed on its own, so don’t hold back!

Here’s how I prepared the simple and delicious salad:

1. To start off the salad, I opted for finely shredded green cabbage and romaine lettuce as the base. It’s important to slice them thinly. I used approximately half of a large cabbage and 1 romaine lettuce.

2. Next, add in 2-3 Persian cucumbers, thinly sliced red bell pepper, and some carrots for variety. If you’re strictly following a keto diet, feel free to swap the carrots with radishes.

3. I also included 2 thinly sliced scallions, a large and ripe avocado, and some jalapeño (optional) for a spicy touch.

4. Now, for the amazing vinaigrette! Use these quantities as a starting point, and then feel free to make adjustments according to your taste: in a small food processor, combine 4 tablespoons of unsweetened peanut butter, 2-3 small garlic cloves, juice of 1.5-2 small limes, 2 tablespoons of soy (or tamari) sauce, 1 tablespoon of rice vinegar, 1 teaspoon of garlic chili, 1 tablespoon of chili flakes, 2 teaspoons of liquid monk fruit sweetener or maple syrup (you can use granulated sweetener if you prefer), but be cautious not to make it overly sweet. Process thoroughly. Taste, and adjust. I almost always make adjustments as everyone’s taste preferences vary.

5. Blend the above ingredients, then add about 1/4 to 1/3 cup of water and blend again as the mixture might be slightly thick. You’ll want to dilute it with water. Taste it, then adjust the flavor as per your liking!

Drizzle the vinaigrette over the salad, toss everything together thoroughly, and then sprinkle sesame seeds or crunchy peanuts and finely chopped cilantro on top of your salad for a burst of freshness.
