DRESSING
– ¼ cup (55 grams) extra virgin olive oil
– 1 teaspoon (5 grams) grated lemon zest
– 2 tablespoons (30 grams) lemon juice
– 1 teaspoon ground cumin
– ½ teaspoon salt
– ¼ teaspoon black pepper
– 1 clove grated garlic
COUSCOUS
– 1 cup (200 grams) dry couscous
– 1 cup (240 grams) just boiled hot water
– 1 teaspoon (6 grams) salt
VEGGIES
– 1 can (15-ounce) (230 grams) chickpeas or 1½ cups of cooked chickpeas
– 1½ cups (150 grams) quartered cherry tomatoes
– 1½ cups (200 grams) diced cucumber
– 1 cup (130 grams) diced yellow bell pepper
– 1 (30 grams) finely chopped shallot
– ½ cup (60 grams) sliced olives
– 1 handful (30 grams) finely chopped parsley
– 2 tablespoons (30 grams) lightly toasted pine nuts
