Here’s an appetizing recipe for one of the most popular main dishes: the potato terrine. The nice thing about it is that it can be flavoured with various ingredients, your favourite ones! Let’s see how to do! We’ll need:
• 2,2 lbs (1 kg) of mealy potatoes
• 1 1/3 cups (200 g) of peas
• 2 oz (60 g) of diced smoked bacon
• ¾ cup (70 g) of grated parmesan cheese • 2 eggs
• 1 tsp of chopped chives / salt and pepper to taste
• 1 ½ tbsp (20 g) of butter / just under ½ cup (100 ml) of milk
Begin by boiling 1 ½ pounds (700 g) of potatoes in salted water, for about 40 minutes.
Peel the remaining potatoes and cut into 1/10-inch (3 mm) thick slices, you can use a vegetable slicer.
Once sliced, boil for 15 minutes until tender.
Meanwhile, brown the bacon in a pan; once browned, add the peas; then finish cooking adding some hot water, if needed.
Peel and mash the potatoes, which have been boiled, then add the peas with bacon, the parmesan cheese, saving 2 tablespoons, the eggs, the milk and the chopped chives; blend everything and add salt and pepper to taste.
Line a 1 ½-quart loaf pan with baking paper, then arrange the potatoes, pour in the puree and cover with the remaining slices. Sprinkle with grated parmesan cheese and add a few knobs of butter.
Then bake at 350°F (180°C) for 30 minutes; to make it golden brown, raise the temperature to 410°F (210°C) during the last 10 minutes.
