One of the most celebrated and North Indian delicious dish that has been loved by almost every indian across the world is paneer tikka makhani. For non-vegetarians of course the same recipe goes with chicken and it’s been called chicken butter masala. Well, it is a very simple yet delightful recipe where the makhani gravy is the most important part. Whether you want to add paneer or chicken it is up to you but you have to be very cautious while preparing the makhani gravy. Ingredients:
For Makhni Gravy:
8-9 roughly chopped Tomatoes
Water
3-4 Green Cardamom
Few Cloves
2-3 Bay Leaves
1-2 Green Chillies
Handful chopped Coriander Roots
7-8 cloves of Garlic
1 big piece of Ginger
1 long stick of Cinnamon
2-3 Black Cardamom
2 roughly chopped Onions
½ cup Cashews
1 tsp Oil
For Tikka Mix:
1 tbsp Mustard Oil
1/2 tsp Turmeric Powder
1/2tsp Red Chili Powder
1 tsp Coriander Powder
1 tsp Cumin Powder
1 tsp Garam Masala

1 tsp Ginger – Garlic Paste
1 tsp Kasuri Methi
Black Salt to taste
1 tbsp Hung Curd
2tbsp roasted Channa Daal Powder
Few Large Cubes Paneer
Oil for frying
For Paneer Tikka:
1 tsp Kasuri Methi / Dried Fenugreek Leaves
1 tbsp Oil
1/2cup chopped Onions
1 tbsp Ginger – Garlic Paste
Water
1 tbsp Red Chilli Powder
Makhani Gravy
1/2cup Butter
1/2cup Cream
Salt to taste
1 tsp Honey
Paneer Tikka chunks
Handful chopped Coriander Leaves
2-3 slit Green Chillies

Method:
For Makhni Gravy:
Take a saucepan, put all the ingredients one by one. Add water and mix everything together. Cover the lid and let it boil and cook till all the vegetables become soft in texture. Once the tomatoes are soft and cooked, take all the whole spices out of the gravy. Now mash the gravy with the help of a hand blender. After this step, strain the gravy with the help of a strainer.

For Tikka Masala Mix:

Take a bowl. Put all the ingredients one after another and combine everything well. Put the paneer chunks into the masala mix and mix well. Now take a grilling tray or pan onto the oven and put some oil.
Add the marinated and coated paneer cubes and fry them till they become brown and grilled from all the sides.

For Paneer Tikka:
Take a pan. First, roast the kasuri methi and take it out from the pan. Now put some oil. Now put some oil and then add onions, ginger garlic paste and red chilly powder. Sauté for a while. Now add the makhani gravy. Then add butter and cream and mix everything well. Put salt, honey, roasted and
crushed kasuri methi and coriander leaves, green chillies and tikka paneer chunks at this stage. Mix everything well and stir the gravy for few minutes. Your yummy and delicious Paneer Tikka Makhani is ready. Serve hot. Enjoy along with Rotis/parathas etc.
