Delicata Squash Season has arrived, and I’m absolutely excited about it!
This delicata squash gratin serves as an ideal accompaniment for grilled meats, roasted poultry, or I’ve even enjoyed it as a main course paired with a salad.
Yields 4 servings: For those adhering to the Weight Watchers plan, each portion amounts to 7 points. For those tracking calories or macronutrients, each serving contains: 253 calories, 16 grams of fat, 17 grams of carbohydrates, 2 grams of fiber, and 10 grams of protein.
Ingredients
2 delicata squash, seeds removed and sliced
4 tablespoons butter
4 tablespoons flour
2 cups milk of your preference (I utilized unsweetened cashew milk)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon cayenne (optional)
4 ounces light Jarlsberg cheese
1/3 cup bread crumbs
Instructions
Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly coat a baking dish with avocado oil spray and set it aside.
Prepare the Squash: Cut the delicata squash into thin circles, roughly 1/4 inch in thickness. Set aside.
Craft the Sauce:
In a medium saucepan, melt the butter over medium heat.
Once melted, incorporate the flour and whisk constantly for approximately 1-2 minutes to create a roux.
Gradually add the milk while whisking to achieve a silky texture.
Stir in the salt, black pepper, onion powder, garlic powder, and cayenne pepper (if desired).
Keep whisking and cooking until the sauce thickens, which should take about 3-5 minutes.
Incorporate the Cheese: Take the saucepan off the heat and mix in the shredded Jarlsberg cheese until it is melted and smooth.
Construct the Gratin:
Place half of the sliced delicata squash into the prepared baking dish.
Drizzle half of the cheese sauce over the squash, spreading it out evenly.
Layer the remaining squash slices on top, followed by the rest of the cheese sauce.
Top with Bread Crumbs: Evenly sprinkle the bread crumbs over the top of the gratin.
Bake: Position the baking dish in the preheated oven and bake for 40-45 minutes, or until the top turns a golden brown and the squash is tender.
