One of the easiest healthy breakfasts, so tasty and perfect for a quick meal. Also microwave the potatoes to save a lot of time as potatoes take so long to cook
Ingredients:
• 250 raw potatoes
• 1 tsp salt & pepper
• 1 tsp garlic powder
• 1 tsp oregano
• 2 whole eggs
• 3 egg whites
• 1-2 tsp olive oil
• Low fat Spicy mayo (optional)
• Garnish with chilli flakes & parsley (optional)
Note: microwave the potatoes for 4-5 mins before cooking. They come out soft and this will save you a lot of time! It’s a great hack🤌🏽
