It doesn’t matter which weight loss plan you are following, this super-delicious Quinoa Salad has to be a part of your diet.
Ingredients:
1 cup white quinoa
1 cup water
Salt
1 tbsp olive oil
1 tsp lemon juice
1/2 tsp black pepper
1 tsp capsicum
1 tsp red bell pepper
1 tsp yellow bell pepper
1 tsp carrot
1 tsp onion
1 tbsp sweet corn
2 tbsp cherry tomatoes
1/2 tsp salt
1/2 tsp black pepper
Kiwis and pineapples on the side
Method:
Place the quinoa in a large pot and add water and salt.
Cook the quinoa until done. Drain the quinoa.
To make the salad dressing, take olive oil, lemon juice, salt and pepper in a bowl. Mix well until the dressing emulsifies.
Place the quinoa in a large bowl, and add all the other salad ingredients.
Add the dressing and mix well.
Serve the salad with kiwis and pineapples on the side.
