My kids like to take salami rolls wrapped in rotis to school. But, all preserved meats have lots of preservatives like nitrates which are harmful to health. So I try to make my own whenever possible. This is one of my basic but successful recipes of Chicken Salami. It is juicy and very flavourful. But, it never lasts until the next day. In fact I can eat it up within the first hour. Try this simple recipe and let me know how you like it. You can add cheese or you choice of herbs. Make sure you season it well. When it doubt fry up a small piece to try it out. Happy Cooking!

500 gm Chicken Kheema/Mince
1 tsp Red Chilli Flakes
1 tsp garlic Paste
1/2 tsp Ginger Paste
3/4 tsp Rock Salt(to taste)
1 Tbsp Bacon Fat
1 Finely Chopped Green Chilli (optional)
1/2 tsp Black Pepper Powder
