This airy and vibrant Greek Pasta Salad is a simple, nourishing recipe that features spiral pasta, chopped cucumber, cherry tomatoes, golden peppers, Kalamata olives, crimson onion, and zesty feta cheese! EFFORTLESS GREEK PASTA SALAD
16 ounces petite pasta (penne, bowtie, spirals, etc)
1 English cucumber cubed
1-pint cherry tomatoes halved
1 bell pepper cubed (golden or orange)
1/2 cup deseeded Kalamata olives cut
1/2 cup crimson onion diced
3 ounces crumbled feta cheese
Greek Salad Dressing
1 large clove of garlic mashed
1/2 teaspoon Dijon mustard
1 teaspoon dried oregano
1/4 cup lemon juice
2 tablespoons red wine vinegar
1/3 cup premium olive oil
1/2 teaspoon sea salt
1/4 teaspoon black pepper

Prepare the pasta al dente following the package instructions. Wash with cold water and move to a roomy bowl.

Incorporate the cucumber, tomatoes, bell pepper, Kalamata olives, crimson onion, and feta cheese.

Mix garlic, oregano, lemon juice, red wine vinegar, and Dijon mustard in a small jar. Gradually whisk in the premium olive oil and add salt and pepper to taste. If utilizing a mason jar, you can just seal the lid and shake until fully mixed.

Drizzle the dressing over the mixture and blend well. Refrigerate for 2-3 hours before serving and relish!

TIPS
This salad has a light dressing. If you prefer more dressing on your pasta salad, consider increasing the dressing amount by 1.5x.

Keep any leftover salad in an airtight container in the fridge for approximately 4 to 5 days. Before serving again, give it a good mix and taste + season once more if necessary. For optimal enjoyment, serve chilled.
