*Ingredients:*
– 5 large egg yolks
– ½ cup (125g) sugar
– 1 ⅔ cup (400ml) chilled heavy whipping cream
– 425g mascarpone cheese
– 1 tsp vanilla extract
– ½ cup (50g) icing sugar
– 1 cup hot water
– 2 tbsp instant coffee
– 36-40 ladyfinger biscuits
– Cocoa powder (for dusting)
*Method:*
1. In a heatproof bowl, combine the egg yolks and sugar, placing it over a double boiler set on low heat. Whisk continuously for 6-7 minutes, or until the sugar has fully dissolved. Allow to cool.
2. In a separate bowl, whip the heavy cream until soft peaks form, then chill it in the refrigerator. In another bowl, smooth the mascarpone cheese, gradually incorporating the cooled egg yolk mixture while continuing to whip. Add in the vanilla extract.
3. Gently fold the whipped cream and icing sugar into the mascarpone mixture, being careful to maintain its light and airy texture. Refrigerate this cream mixture for later use.
4. Dissolve the instant coffee in hot water. Quickly dip the ladyfinger biscuits into the coffee (avoid soaking them too long).
5. In a serving dish, arrange a layer of the dipped ladyfingers, followed by half of the cream mixture. Repeat with another layer of biscuits and top with the remaining cream.
6. For optimal flavor, chill the tiramisu for a minimum of 4 hours or overnight. Before serving, dust liberally with cocoa powder.
