Deliciously Healthy Moist Carrot and Date Cake Recipe

**Ingredients**

– 1 ½ cups grated carrots – Fresh, finely grated carrots contribute natural sweetness and moisture.
– 1 cup pitted dates – Dates lend a rich sweetness and offer a healthier alternative to refined sugar.
– 1 ½ cups all-purpose flour – This can be substituted with whole wheat flour for a denser texture.
– ½ cup vegetable oil – This adds richness and moisture; melted butter or coconut oil can also be used.
– 2 eggs
– 1 tsp baking powder – This ingredient helps the cake rise and achieve a light texture.
– ½ tsp salt – Enhances the overall flavor of the cake.
– 1 tsp vanilla extract – Adds a gentle, sweet aroma.
– ¼ cup chopped walnuts (optional) – Provides a pleasant crunch.

**Instructions**

1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch round or square cake pan or line it with parchment paper.

2. Prepare the dates: Soak the pitted dates in warm water for 10 minutes to soften them. After soaking, drain and blend them into a smooth paste using a blender or food processor.

3. Grate the carrots: Use fresh carrots and grate them finely. Set the grated carrots aside.

4. Mix the dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon powder, nutmeg, and salt.

5. Prepare the wet ingredients: In a separate bowl, whisk together the vegetable oil, milk, vanilla extract, and date paste until well blended.

6. Combine wet and dry ingredients: Gradually pour the wet mixture into the dry ingredients, stirring gently until just incorporated. Gently fold in the grated carrots and chopped walnuts (if using).

7. Transfer the batter to the prepared cake pan and smooth the top with a spatula.

8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
