Ingredients (4 servings)

– 800g Chicken Breast Cubed
– 4 Garlic Cloves Minced
– 20-30g Tomato Paste
– 1 tsp Salt & Pepper
– 2 tsp Onion Powder
– 1 tsp Cinnamon
– 2 tsp Paprika
– 2 tsp Olive Oil
– Lemon Juice

Butter Chicken Sauce

– 30g Light Butter (Brand: Lurpak)
– 1 Medium Onion Sliced
– 2 Large Tomatoes Chopped or 1 Canned Tomatoes
– 40g Cashew Nuts
– 120g Low Fat Yogurt

Butter Chicken Seasoning:

– 1 tsp Salt, Pepper
– 1 tsp Paprika
– 1 tsp Garlic Powder
– 1 tsp Turmeric
– 1 tsp Cumin
– 1 tsp Garam Masala

Golden Rice:

– 500g Cooked Basmati Rice
– Season with Salt, Paprika, Turmeric

Side Salad:

– Chopped Tomato
– Sliced Red Onion
– Chopped Parsley
– Salt, Pepper, Garlic Powder
– Squeeze of Lemon

Important Cooking Notes:

– Marinate the chicken overnight for best flavour
– Oven bake for 15mins at 190C / 375F
Air Fry for 12mins at 190C / 375F
– Make the golden rice while the chicken is cooking
– I would recommend making the butter chicken sauce first before you cook the chicken and rice
– Add a little milk in the butter chicken sauce before bleding to have a better smooth consistency
– You can store the butter chicken sauce in a squeezy bottle or serve with a spoon
