Chicken Kendo | Sesame chicken

Required Ingredients:

450gm Chicken Breast
1 diced onion
1 diced bell pepper
4 chopped garlic cloves
1 inch julienne-cut ginger
1 scallion – small slices

1 Cup – Cornstarch
1 Tsp Crushed Black pepper
1 Tsp Salt
2 to 3 Tbsp Rice flour

For Marinating the Chicken:
Cut the chicken into cubes
1 Tbsp Light Soy Sauce
1 Tbsp. Sesame oil
1 Tsp. Brown sugar

1 Egg white
Pinch of Five Spices (Star Anise, Cloves, Cinnamon, Sichuan Peppercorn & Fennel Seeds blend)
Marinate the chicken with the ingredients and allow it to rest for 30 minutes.

For the Sauce:
2.5 Tbsp Light Soy Sauce
2.5 Tbsp Sesame oil
1 Tbsp Rice vinegar
2.5 Tbsp Ketchup
2 Tbsp Honey
½ Tsp Fresh Ginger
½ Tsp Fresh Garlic
3 Tbsp Water
Add water and mix.

Mix 1 cup of corn flour, black pepper, salt and rice flour in a bowl.

Coat all the marinated chicken in flour mix.

For Frying:
Heat the oil to 180°C in a wok.
Add the chicken and deep fry until it turns golden brown.

In a separate wok, heat 2 tbsp of oil.
Add garlic, ginger, onion and stir-fry for 1 min.
Then add bell pepper.
Add sauce and stir-fry for another 1 min.
Add spring onion.
Now add fried chicken and mix.
Stir-fry for 1 to 2 minutes.
Finally, add 2 to 3 tbsp. of Sesame seeds and mix.
Sesame chicken is ready.
