**CHEESE PUFF PASTRY (GOUGERES) – HOLIDAY APPETIZER**
**INGREDIENTS:**
– 1/2 Cup Milk
– 1 Stick Unsalted Butter, cut into pieces
– 1 TBSP Sugar
– 1 TSP Salt
– 1 Cup All-Purpose Flour
– 3 Large Eggs, at room temperature
– 1 Cup Grated Cheddar Cheese
– 1/2 Cup Grated Gruyere Cheese
**DIRECTIONS:**
1. Preheat your oven to 425°F.
2. Prepare two baking sheets by lining them with parchment paper. Set aside.
3. In a saucepan, mix 1/2 cup of water with the milk, butter, sugar, and salt. Heat over low, stirring until the sugar, butter, and salt have dissolved. Increase the heat to medium and bring to a vigorous simmer.
4. Remove from heat and promptly add the flour. Stir with a wooden spoon until the mixture thickens, becomes smooth, and no lumps of flour remain. Return to the heat and cook, stirring frequently, until a film forms on the bottom of the pan. Continue for another minute or two, being careful not to disturb this film.
5. Transfer the mixture into a food processor.
6. Blend for about a minute to cool it down. With the processor running, add the eggs one by one. Monitor the consistency; it should be smooth and glossy.
7. Fold in the cheese.
8. Using a small cookie scoop, drop generous portions onto the prepared baking sheets, ensuring they are spaced an inch apart. Immediately place them in the oven.
9. Lower the temperature to 375°F and bake for 20 to 25 minutes, or until the cheese puffs turn a beautiful golden brown.
