Ingredients (with American measurements):

2 sheets of puff pastry, thawed (about 17.3 oz or 490g total)

Salmon Mousse (for 12 pieces):
3 oz (85g) smoked salmon (reserve some for decoration)
4.2 oz (120g) cream cheese
1.4 oz (40g) Ranch cheese (or any flavorful, dense cheese)
2 to 3 tablespoons heavy cream
1 to 2 tablespoons lemon juice
Chives for decoration

Chicken Mousse (for 12 pieces):
12.3 oz (350g) cooked chicken (see video for details)
4.2 oz (120g) cream cheese
1/4 cup (60ml) heavy cream
Capers, olives, and cherry tomatoes for decoration

Shrimp Mousse (for 12 pieces):
10.6 oz (300g) shrimp with tails (reserve some for decoration)
4.2 oz (120g) cream cheese
1.4 oz (40g) Ranch cheese (or any flavorful, dense cheese)
2 to 3 tablespoons heavy cream
1 to 2 tablespoons lemon juice
