Mediterranean Delights
Zucchini Cake
3 eggs
½ cup vegetable oil
½ cup natural unsweetened applesauce
1 Tbsp vanilla
3 cups all-purpose unbleached flour
1 Tbsp cinnamon
½ tsp allspice
½ tsp baking powder
2 cups sugar
2 cups grated, peeled zucchini
1 tsp salt
1 tsp baking soda
1 cup ground walnuts
1. Beat eggs with electric mixer, until light and foamy. Add oil, applesauce, sugar, zucchini and vanilla and mix well.
2. Preheat oven to 350 degrees F. Grease and flour 9” by 13” pan.
3. In another bowl mix together flour, salt, cinnamon, allspice, baking powder and soda. Add the dry mix to the egg mixture and blend together very well by hand with spatula or whisk.
4. Fold in walnuts. Pour batter into a greased and floured 9” by 13” pan.
5. Bake for 45 minutes to 1 hour until toothpick inserted in center comes out clean. You can modify this recipe with some of your own changes, or add about ½ cup of raisins, cocoa powder, or chocolate chips if you like. It is similar to a carrot cake or pumpkin bread recipe. If you like, frost the cake with a sour cream frosting, whip cream or vanilla frosting. Or, simply serve with whipped cream on the side. Enjoy with hot coffee or tea!
