Mediterranean Delights
Zucchini Broiled
Serves 4-6
1 cup mozzarella cheese, shredded
2 Tbsp diced pimiento
3 Tbsp chopped ripe black olives
6 small zucchinis, washed and sliced lengthwise into two or three slices
2 Tbsp olive oil
1 clove garlic, crushed
Salt and pepper
¼ cup finely chopped Italian parsley
Preheat broiler. Place rack about six inches below broiler.
Combine cheese, pimiento and olives in a small bowl, set aside.
Brush both sides of each zucchini slice with olive oil. Arrange slices on a broiler pan or cookie sheet. Broil for about 5-6 minutes until tender.
Spoon some of the cheese mixture onto each zucchini slice until each is well topped. Broil again for a few minutes, until cheese melts and slightly browns on top.
