Sweet Potatoes (Serves 6-8)
6-8 small to medium sweet potatoes or yams
Butter or Margarine (softened) (Smart Balance or Olivio are two excellent blends)
ground cinnamon
1 8 oz container whipped cream
Natural clover honey
This is a simple, but very delicious dish. Forget the brown sugar, and baking twice, these sweet potatoes are so sweet all on their own with a little help from the whipped cream. If you wish to add a little more sweetness, drizzle each plate with some natural honey. You'll love them!
1. Rinse and scrub the potatoes in cold water. Pierce each potato or make
two to three small cuts along the top of each. Bake in preheated oven
at 450 degrees F. You may wrap each in foil, but it is not necessary.
You can simply place them on an ungreased cookie sheet. Bake for
about 35-45 minutes or until potatoes are tender.
2. When cooked, remove from oven. Working carefully, slice the potatoes
into 1/4 inch to 1/2 inch rounds. You can easily remove the peel at this
time, if you wish. Arrange on each guest's plate. Top the slices
with 1 to 2 tablespoons of softened butter or margarine. Sprinkle a little
cinnamon. Top with 2 to three tablespoons of whipped cream. Sprinkle
a little more cinnamon on whipped cream. Optional, drizzle with natural
honey for a little added sweetness. Serve immediately while still
hot. Enjoy after any meal with a hot cup of coffee!!
