Steak -- Flank Steak Stuffed with Spinach and Peppers
Serves 4
Requires 2 hour marinating time.
1 cup beef broth
1/4 cup soy sauce
2 - 3 colves garlic, minced
1 large flank steak, about 2 lbs
1 cup thaswed, frozed chopped spinach, squeezed
1 small jar (about 8 oz) roasted red bell peppers, drained and chopped
1/2 cup crumbled blue cheese (or feta)
Salt
Pepper, freshly ground
1. Combine broth, soy sauce and garlic in a small bowl. Place steak in a large reasealable plastic bag. Pour marinade over the steak. Seal the bag and allow to marinate for at least 2 hours in the refrigerator.
2. Preheat oven to 350 degrees F. Combine spinach, peppers, and cheese in a medium bowl. Remove steak from the bag and pat dry on work surface. Reserve the marinade.
3. Place spinach mixture lengthwise across 2/3 of the steak. Roll steak tightly around the mixture and secure with toothpicks or string.
4. Season with salt and pepper. Place in a roasting pan. Bake 30 to 40 minutes for medium -rare, longer for well-done. Bast twice with marinade for first 30 minutes. Allow 10 or more remaining minutes for steak to cook without basting. Slice to serve. This goes very good with small red potatoes, green beans, asparagus, and a salad. Enjoy!
